Real Neapolitan training. Our founders Stephen de Haan and Greg Grant apprenticed in Naples (Pizzeria Mattozzi, Pizzeria Da Attilio) and completed AVPN coursework before opening Amalfi in 2016—importing two 6,000‑lb wood‑fired ovens to Atlanta.
AVPN standards, every day. Dough from finely milled 00 flour, slow‑fermented ~48 hours, hand‑stretched (no rolling pins), and baked ~60–90 seconds at ~900°F in a domed, wood‑fired oven.
